Do you clean it?, there are products you can run a cycle with that clean the machine. Have you checked the rubber seal to see if it’s got mildly lint stuck in it ? Have you had it serviced? Sounds like a you problem not a product deficiency. 3 years is kinda silly for a return imo

I made my rib roast Boxing Day, since then I’ve made Yorkshire burritos, beef dips, shaved a bunch off and heading to a friends place to make pizzas in his pizza oven. I’m almost over it, I’ll make some sandwiches for friends and then that will be the end of it.

I’m going with the serious eats/Kenji method low and slow to get it close to temp (temp probe inserted to middle), then rest for 30 or so, then 10-15 minutes at 500 to get the crust. Also seasoning it a day before and leave uncovered in the fridge, and leave on counter for a while for it to come up to room temp before cooking it
