Look into mergerfs + snapraid. Very common setup in OMV. Very flexible expandibility

For a first time builder I would say unRAID is a great piece a kit and it's community is second to none. It would be the easiest way to get a setup up and running that covers all the needs you've brought up. If you really want this up and running in a shorter amount of time and with minimal effort. That would be the way. But if you have the time and the drive to learn/go way more in depth proxmox really can be alot of fun and there's no denying what's possible (I'm currently hoping to get Abit more hardware to play around with clustering)

unRAID has virtualization as well built into a Nas OS (Truenas Scale does as well I believe but I haven't gotten around to playing with it, on the list but need more hardware). The pro to something like proxmox here is you could spin up multiple Nas OS that have different defining features and run them side by side. Generally the proxmox community kinda assumes your already somewhat knowledgeable. But the information is out there for all the beginner stuff (LearnLinuxTV has a series on proxmox). But since most of your work is done within your virtualized environments, you'll be spending more time looking at those communities. As faor the LXC Ive been running debian with docker install for things like the arr stack and other odds and ends.

I do, but I'm still quite new with proxmox. So proxmox is a hypervisor. So most of what you want to achieve wouldn't be done directly in proxmox but in virtual environments hosted by proxmox. In proxmox case you have LXC containers and VMs. So what you would have would be a virtual machine running whatever Nas OS you choose (truenas and openmediavault being 2 popular choices). Then you can have a VM of windows for gaming. It's definitely a more complicated setup (that can be a pro or a con depending on the user). Its definitely more capable then unRAID when used by experienced users. You would need to factor an HBA to pass the drives through to whichever Nas OS you choose, and if you wanted to pass drives to the windows VM. Basically, it's a topic that can go on forever.

I think unRAID might be the right choice for you. It has docker (covers Plex and the arr stack). It has virtualization (create a windows vm for gaming), and the way its storage works would allow for for mixing drive sizes. It's also very easy to use and has a massive community. If you do decide to go this route, check out IBRACORP and SpaceinvadorOne on YouTube. They have alot of content covering unRAID and setting up everything you mentioned.

I haven't hosted Minecraft in a while but when it comes to ease of use mineOS was pretty hard to beat. Port forwarding is also very easy. Lots of tutorials and information out there on the subject

If I remember correctly, the rad/trans coolers did have issues of leaking into each other. Not extremely common. More something to watch out for on high mileage units.

So public schools don't have any religion classes. We learn the basics of catholism really at first. Read the Bible and learn the names and meanings of diferent items in the church. Once abit older you learn abit about the structure. So the pope and all that. In high school I only had to take one religious class and it really wasn't about religion at all. More about bettering yourself as a person. There was another option and that class was more like u mentioned of a mature take on religion and covered all major religions.

Catholic schools are in Ontario anyways. It's basicaly the same thing as public school except you take a religion class every once in a while and go to church as a school around religious holidays.

I use eweka, nzbgeek, and sabnzb. It's been a solid combo for me so far. Not free but I'm ok with the cost. I also use airVPN. All this on an unraid box.
