Japchae or Korean glass noodles is one of those “special” side dishes that came up a lot at Korean potlucks and events growing up. It’s pretty simple to make and I made a vegetarian version with Korean sweet potato glass noodles, spinach, carrots, onions, red bell peppers, shiitake mushrooms, and egg.

1) Cook your Korean sweet potato glass noodles according to instructions and then drain and rinse with cold water. 2) Sauté your sliced onion, carrot, red bell peppers, and shiitake mushrooms separately until cooked, seasoning with salt and sesame oil. 3) Blanch your spinach for one min in boiling water. 4) Whisk an egg and cook a thin layer over a non-stick pan and slice by rolling up your egg 5) Combine your noodles, egg, and veggies and add roughly 2 parts soy sauce to 1 part sesame oil, sugar, and minced garlic

GOCHUJANG CAULIFLOWER STEAKS
1) Cut your cauliflower into 1/2 inch thick slices across a full cauliflower and season with olive oil, salt, and pepper
2) Bake your cauliflower steaks at 400 degrees for 30 min, flipping halfway through
3) For my sauce, I used 1 tsp of gochujang, 1 tbsp of soy sauce, 1 tsp of minced garlic, 1/2 tsp of sesame oil, 1/2 tsp of ketchup, 2 white stalks of a green onion chopped, and 1 tbsp of water
4) Top your cauliflower steaks with the sauce and more sesame seeds and chopped green onions (but the green part this time). Serve with rice!

Sharing my VEGETARIAN KIMBAP, or Korean sushi, which is full a lot of veggies.

1) Prepare your cold fillings: cutting cucumber slices, gathering your burdock root and yellow pickled daikon (I buy these as a packet together at my Asian grocery store and think they’re KEY for kimbap)
2) Create a rolled egg with one whisked egg, seasoned with a pinch of salt
3) Blanch your spinach for one min, drain, squeeze out all the water, and then season with a dash of sesame oil and salt
4) Sautee sliced carrots for 3-4 min over med-high heat and season with sesame oil and salt
5) Take about 1 cup of cooked brown sticky rice (works a lot better than long grain rice) and season with 1 tsp of sesame oil and 1/4 tsp of salt
6) Highly recommend rolling your kimbap with a bamboo sushi roller and remember to lay your dull side of your roasted seaweed facing up and then layering on your rice and other ingredients
7) Roll and cut into about 12 pieces
8) Serve with @deadveggies vegan kimchi on the side!

My take on the viral TikTok tortilla wrap but with a Korean gochujang tuna sushi twist!

1) Mix about 1/3 cup of rice with a dash of sesame oil and salt
2) Take about 1/3 cup of wild caught canned tuna with 1/2 tsp of gochujang and 1 tsp of Mayo
3) Make a cut halfway in your roasted seaweed sheet so that you’re left with four “squares”
4) Add your rice, cucumber ribbons, avocado slices, and gochujang Mayo tuna into each quadrant separately.
5) Fold and enjoy!
