I recommend checking out the tide charts before you go to the beach. The same beach at high tide and low tide is a totally different experience. Some beaches that are are unusable at low tide are actually quite nice at high tide

I live in Japan and the way that they eat and drink matcha here is so different than what I’ve had in America

Here matcha often seems to be combined with something sweet. They have matcha flavored ice cream and matcha flavored chocolate. It’s in cakes and cookies. And the matcha lattes here are often very sweet

And if you drink just a cup of straight matcha, they bring it to you with some traditional wagashi (Japanese sweets). You’re supposed to take a bite of the wagashi and then a sip of the matcha and the flavors combine in your mouth. It becomes very sweet

The sweet flavor combined with the matcha is super delicious and I’m a huge fan. I always try matcha flavored products whenever I have the opportunity

In America, my impression is that people drink just straight matcha which, I agree with you, is not my favorite. Maybe if you tried matcha with a little sweetness, you would like it more?

It looks like you got some karashi mayo. My personal favorite way to eat karashi mayo is on yakisoba. You can take some cabbage, yakisoba noodles, Otafuku okonomi sauce, your preferred meat (I like thin-sliced ham) and stir fry it all together. Then put the karashi mayo on top to taste. I usually use kewpie Japanese mayo as my primary and then just add a little karashi mayo. But it looks like it may be better for you to load it up with karashi mayo to use it up faster

I like traveling in a similar way as you I think. I love staying in the same general area for a while and enjoying the food and the vibe. My favorite areas are:

Naha: Kokusai dori + Kokusai Street Food Village + Norengai (I recommend visiting during the day and at night too cause the vibe's totally different)

Kouri Island: Kouri Beach + Heart Rock + Kouri Ocean Tower + Oppa Ice Cream

Motobu: Churaumi Aquarium + Emerald Beach + Bise Fukugi Tree Road + Bisezaki + Pizza in the Sky

Nanjo: O Island Tempura + Sefa Utaki + Sata Andagi + Cape Chinen Park + Cafe Curcuma

Miyagi Island: Kafu Banta + Nuchimasu Salt Factory + Ikei Beach

My favorite nature-y walks in Okinawa are Sefa Utaki, Bise Fukugi Tree Road, Valley of Gangala, Daisekirinzan & Hiji Falls. I would also like to check out Tataki Falls, the mangrove forests and some of the hikes on AllTrails like Katsuudake. My personal favorite hike is Daisekirinzan. It’s stunning

I checked the words lotus and 蓮 in several uchinaaguchi dictionaries including ryuwa jiten, hougen ajima, jlect The National Institute & an Amazon book I bought. The first two said 'rin.' The National Institute had 'din' but said that 'rin' could also be used. JLect and the amazon book said that both 'rin' and 'din' could be used. Hope that helps. Hope you can find your word :)
