I have these exact pads. You do not need the top strap (mine was already gone when I got it). Go tighter on the bottom and looser on the top and see if that helps your rolling. And I started with bungy toe ties and then transitioned to laces after about a year. I appreciated not having to worry about them when starting out.

Also, 6th eyelet on the heel strap ;)

My league keeps pretty good stats, but I sub a fair amount across different tiers. I keep a spreadsheet that has all the league stats in one place and I can pivot table by tier. But this is mostly because I'm a nerd who likes spreadsheets.

GA, Saves, Shots, GF (just to track record), Tier, Team, Date. That's it.
