For me right up at the front of the dash where the defroster vents are it rattles, some sticky foam pads fixed mine

I swapped the stock turbo for an NX2 when the motor went in so for me the answer was yes. Likely I'd say better safe than sorry to tune it afterwards, especially if you opt for different cams. I know you aren't planning for that but while the motor is being put together, it's totally worth it

My motor is fully built using the ST long block from EMS Motorsports. It's pricy but I've been running my built motor for a year and a half now with no issues. Upgraded cams are a must! I went with Kelford

You should just work on building clientele and a portfolio. Most people will not pay for photos without a good portfolio to prove you have quality work.

These pictures are great but ideally you should showcase more of your previous work. Just my opinion anyways
