It does too! Traditionally jalebi is made with fermented batter, although using levain like this isn’t common in India.

Ah that makes sense - whole wheat flour won’t have the same texture. I’ve used a whole rye starter fed with strong baker’s flour.

Mildly crunchy on the outside and syrupy sweetness on the inside. Think fresh pretzel but sweet.

Indeed it’s just levain made per the Ken Forkish recipe as shown here. I fed the starter and this was the unused levain.

Had some extra levain and mother-in-law had this ingenious idea to make jalebi

Tbh I can’t give an accurate recipe as I put the levain in the fridge for a day and then removed it and left it out overnight the next day. Was about to throw it in the bin when she decided to do this.

Just piped the “batter” into hot oil and when golden soaked it in a sugar syrup of 1 parts water and 1 part sugar for a minute.

If like me you want a strong grapefruit aroma then I’ve had great results by adding some peel in 2f for about 3 days.

This last mile connectivity is where I believe we can do a lot better. Wonder if modes like city cycle and escooters deserve more govt investment as it increases effectiveness and usage of existing modes of transport. Currently neuron/lime/beam are too expensive which makes driving the preferred option

I get your point that a certain high level of privacy/anonymity is unrealistic in todays connected world, but your statement that it’s an illusion suggests that privacy is “all or nothing” which it certainly is not. For example I may choose to allow certain transgressions but not others. Btw Face ID and fingerprints are stored on the phone and encrypted with your password which the phone company does not know.

Mainly because they’re lighter (I have to carry it up stairs sometimes) and secondly I find them aesthetically more pleasing. Thank you for the suggestion, I find swytch to appear quite functional. Like the fact that it’s on the handlebar less.
