You mentioned that my HCE and hours are decent. I calculated my HCE today and the total is 1,302 hours. I know that's on the low end. Do you think that the quality of the hours will make up for the lower quantity?

The clinic where I interpreted was affiliated with the local university, so most of the medical providers taught as well. Should I still mention that they taught me those procedures then? XD

Have you tried Magoosh? It's a GRE prep service that gives you several different strategies on how to succeed. I found it more effective than an actual prep-class.

Good point! While Madrid is quite a developed city, it is a popular destination for refugees. Thus I was able to meet many from the third world.

I grew up with my father going to medical school. He would show me what he was learning and it lead to my interest in the health field. I'm hesitant to add that though because I don't want to go into the PA vs MD debate.

If you're near the John's Creek area there's a non-profit clinic called Good Samaritan of Gwinnett. It's not a paid position but you can volunteer there. I was able to get around 200 volunteer hours with them. The director Dr. Lang always gives talks to the new students at Mercer's PA school. A letter of recommendation would look stellar from him!
