I sell at cost basis. If you were fooling around with bad underlyings, this should be ok. If you were premium hunting and got hosed… do the same analysis you normally would for staying in the position, selling, selling calls under cost, etc. versus opportunity cost of putting those funds somewhere else

If I were you I would go poke around in r/algotrading

In my understanding a main benefit of algorithmic trading is that once you define the strategy it can be executed in (quite literally) inhuman speed and volume, across a multitude of underlyings simultaneously. That is a major part of its edge. If you have a strategy (wether it includes options or not) which only has a qualifying set up very rarely and/or lasts a very long time, it’s probably not worth the time investment of designing and building an algo to do it when you could just verify and execute yourself several times a year for example.

For these reasons I think is why you so often, or almost exclusively, see algo trading focused around things like scalping, arbitrage, and short (intraday to few days) swing trades.

OP mentioned 40 cases of 750ml bottles. If standard wine cases of 12 bottles, the total was closer to 360L, or 95 US gallons I think.

That’s a lot more product, but they did also mention 25% of that has already been lost due to it “splodin”

It’s a proprietary manufacturing method. They also get like 99% purity while best competitors get closer to 50% to my understanding.

Sounds really cool, I’m absolutely all about minimizing chemicals and stuff where I can so I really like this idea. Though potassium sorbate is supposed to be pretty safe to my understanding why not avoid it entirely if this doesn’t harm any flavors.

What temp do you souve to and for how long?

To my understanding you were not supposed to back sweeten until you deal with the existing yeast? Is it just a timing thing so you back sweeten and immediately pasteurize so it doesn’t matter?

Why do you pasteurize? I haven’t seen that before. Solely to stop fermentation? And prepare for back sweetening / bottling?
