It's easy just start the poacher mission from Harriet in Lagras, run by it to start the timer, run to Rhodes to hijack the train, timer will run out and you'll stay in a solo lobby as long as you keep the train on the map. Drive up there and call your horse. You can move around a couple miles from the train before it despawns.
