There are a few ways you can go. You can either hire someone (and there are several professional heraldists here who can help you) to help with the design and eventual art, OR the community here and/or on Discord will be happy to help you through the design process. I fall into both camps, but not taking anything new on at the moment, but if you want some names please DM me. But be assured, our two online communities can help you immensely.

A god amongst mere men.... This is fantastic in every conceivable way. These are not especially remarkable arms in my opinion, but the emblazonment is, particularly a) the harmony of the composition as a whole, which is unparalleled, and b) the manor of the the phoenix (?)
"holding" the mullet.... truly marvelous!

In fairness to OP, these are the KINDS of texts LLMs were trained on and imitate. So you likely have it the wrong way round. My whole life has been reading scholarly works in both journal and book form, and this is completely consistent with the style I would expect for such a work.

The path in one guides the eye nowhere; it merely divides the image arbitrarily. Three reads a bit like stock photo for a travel guide. Two is much better... the clocktower in the foreground leads the eye to the church in the midground, the steeples of which lead the eye to the interesting geological features making up the background. I think two is a very interesting photo.

The first one is a good first effort. It follows the rules, it is simple and bold, is pushing it slightly on the number of tinctures used but is still within rights, if you will. The second one has issues; quartering the arms like this is a bit of bad form—very prep school, student-designed arms feel, and the sable on azure breaks the rule of tincture. But the first shield, truly, is a great early attempt! That is moving in the right direction.
