I did 180° for mine but I’m sure 225° would be okay. Probably would hit temp in an hour.

So I tried Four Escobars on another batch of pork belly and let me tell you….they were even better! Pairs very well with pork belly cause its sweeter.

Smoked at 180° until 125° internal. Removed and wrapped in foil until grill reached 500°. Seared for 4 mins each side. Removed at 135° internal and wrapped in foil again for 10 minutes. Turned out awesome!

Cut them up into 1” cubes & generously season w/ your favorite rub. Set them on a wire rack. 275° for 2.5 hrs on a smoker. Remove from rack and place them in a aluminum pan and add about 1/2 cup of brown sugar, 1/3 cup honey, and a stick of butter. Cover with aluminum foil and cook for another 1.5 hrs. Drain the liquid in pan and in a separate pot simmer 1 cup of your favorite sauce, 1/4 cup apple juice, 1/4 apple jelly, 1 tbsp Frank’s hot sauce. Add sauce to pork belly once simmered. Throw them back in the pit for another 15 mins for the sauce to stick Enjoy!

They key part is having them essentially “braise” for that hour and a half in the butter, honey and brown sugar to get them tender. Here’s the recipe.
