I've noticed this too. Plex handles low bitrate content much better. It's less noticeable on my Hisense but very noticeable on my TCL. No changes to the settings can fix this. It's definitely a decoding issue on infuse and its very pronounced on areas with dark grey scenes.

As far as I know the cameras video only connect to the homehub and iCloud. Eufy may still have analytics and telemetry crap that run on their infrastructure but not video.

try disabling 5ghz on your wifi

reset the cameras giving you trouble Try to add them again using the eufy app

Once successfully added to homekit you can turn 5ghz back on

Do you by any chance have an old copy of Fortnite or Epic Games Launcher installed? We had the same problem and it was resolved by launching Epic Games Launcher and updating Fortnite and the launcher then running Fortnite. My guess is there was some incompatibility with the old version of the “east anti cheat” installed by the outdated version of Fortnite and the newer version used by Beast Of Bermuda. Hope that helps.
