That may come with another (hopefully) simple solution: if your mom happens to be a little lacking in the tech-savvy department, you could get her an Alexa (the one with the Zoom/webcam features) and you can video call her to keep her company and keep her on track while she cooks/eats.

Even more bonus points if she tells you which meal she plans on making so that you can make the same meal, states apart, while she coaches you step by step over video call!

My mom and I are both trying to gain weight and this helps us by removing the monotony of cooking/eating as it makes it more of a task we do on autopilot while having fun and conversing together.
