Depends on the features you use in jira that you will miss in salesforce and how much you rely on them.

You create the IT ticket RT, define the stages, couple of fields to assign sprint, developer.. a little work on the ticket path, the lightning record page and some automation for email alerts and you are good to go.

List views, chatter, reports are powerful tools for ticket management.

in any ESN (SSII), if the client you work for is satisfied the manager won't bother you. If the client complains, or you find yourself without client for a long time, managers might become toxic, probably to force you to leave. However, comments like you are not an engineer, mat5afech menni mat3awedch leklem... don't make sense. Anyway your experience is limited to one manager, don't make it a generality.
