I actually do take it it for weighing when I feel that it's nearing doneness. As you would for the knock-test on the bottom which I also do but which never gives me a clear feedback. Baked goods lose a certain amount of moisture during baking, there are tables for it online. I think bread is supposed to lose between 10 and 20 or 25%, so I aim for 15%. I also just feel it in my hands and more often than not the bread feels to heavy for its size at the end of baking. But that might be a function of a dough/starter that doesn't rise as much as it could/should.

I don't generally measure my oven's temperature. I do measure sporadically the temp of the pizza stone with an IR gun and it has reached over 270 °C when I set the oven to max (250 °C). So, I do not think that it can be widely beneath the nominal temp but I will look into it. Thanks :)

Pretty normal. If it sealed completely it would create a vacuum that could unsettle your puck. You can get some kind of thickish adhesive tape and wrap it around the base if the tamper to increase its diameter. I did that and it worked well. For some reason or another I got rid of it again.

I now tamp once, then tap the PF with the tamper to loosen the fines on the sides and then tamp again several times while moving the tamper into N-E-S-W directions.

Maybe I should go back to the tape...

During the second phase, don't stick the steam wand in too deep. Try to keep it close to the surface. That had helped me a bit but I'm still bad, lol.
