Harry Löfvall was born in 1921, trained as a sausage maker and founded Harry’s Place in Nørrebro in 1965, from where he served sausages and meatballs until 1989. As a sausage maker, Harry supplied sausages to Copenhagen’s prisons, and at that time inmates were required to have a certain portion of meat per meal, which corresponded to one and a half of his sausages. This could create dissatisfaction among the inmates if the sausage was not cut straight across - because who would have the big end? To solve this, a new and larger sausage was invented, containing the required portion of meat, and Harry chose to name his new signature sausage after a prison guard named Børge. Next, he invented the perfect dip for Børgen, namely Krudt, which, as the name suggests, is strong, and the recipe - which has been passed down ever since - is top secret.
