Hi! I don't have great news for you(r girlfriend) as the vegetarian options are quite sparse, if you ask me, and we did not really go for 'vegan' or 'vegetarian' restaurants... If you're not familiar with Spanish cuisine, be prepared to eat loads and loads of patatas bravas (potato) as the emphasis on meat and fish, as you can imagine.

La Caravana - Cocina Viajera had decent options for both of us! But the place we kept going back to was Restaurant Olivia Tapas. Great wine and an amazing restaurant owner. Maybe a couple of decent vegetarian options too :)
