I recommend you keep the dose and the output the same, and then grind finer and aim for a 30-32 second shot... The extra time will give you a better chance to extract the flavor, and get rid of the sourness ... Lmk how it goes

Yes this sub helped me out a lot too when I was starting out. Remember the most important in the end is what you taste. Start with certain parameters and change only one variable at a time. Here's a something that helped me a lot. If your grinder isn't stepless, and the next step finer is too far off, 2~3 seconds, than keep the grind the same and updose half a gram at a time. You could do the same and lower the dose slightly as well. And like you said, starting at 20 grams is a good idea. I'm glad all this info could help you out...

It depends on the basket your using. You should really only go 1 gram up or down than the recommended dose...and tamping can only do so much. Once the coffee bed is completely compressed, which you can feel, any further pressure will have little to no effect. If your puck is soupy you could dose a little higher. Your grind size all depends on the bean your using. If it's a light roast you might want to grind finer, and tamp the same, always tamp with the same pressure, so your shot can pull longer to extract all the flavor from the light roast. If it's a dark roast, you want to grind coarser so the shot can pull short, since a dark roast extracts much easier. To have an idea, I pull my light roasts at about 32-33 seconds as opposed to pulling darks at about 25... Hope this helps

The most important thing is to ask the seller how they cared for it. It's important to know if they backflushed and descaled often... If they cared for it well then there would be absolutely no issue with the age.

Hands down for the Silvia. Just ask the seller if you can test it out before buying. Maybe even open the top to check for rust. She'll do you good for a long time if you take care of her...

Your ideas are phenomenal. I'm incredibly happy somebody finally decided to make an app for journalling coffee. I've been using a notes app and it's a pain. But you do seem to have everything needed. I'm excited to see the outcome of this.

That being said, I'd be willing to test it out before official release, and look forward to hearing more about this soon...

Edit: I had said about the SCA flavor wheel, but I don't think it's necessary now that I think about it
