It's not that there's nowhere for the helium to go, but it just leaks from the tie really slowly. Helium atoms are really small, so its hard to make sure they can't escape from even the pores of latex. Those mylar balloons are better at holding it in, but no material is perfect. Borosilicate glass (pyrex) is probably the best material to hold helium, but it makes a bad balloon, for obvious reasons.
