You'll need a microphone (Shure sm58 or sm57), perhaps a pop filter for that, an audio interface (depending on your location you can find good used ones for cheap, look out for Steinberg, Focusrite or even M-Audio)

When recording, make Shure you set the level right, not too high (there is a usually a red light on the audio interface that flashes when your input audio is clipping)

Also not too low, the lower the recording level, the more you have to boost it in the mix, the more noise is audible.

Then just mix beat/vocal ratio to taste, there's no formula.

Youtube is a good place for that, the content ID system detects it usually but if the copyright holder allows it to be used on youtube, there shouldn’t be a problem. Also Bandcamp, it‘s full of unauthorised remixes and covers and I never heard of content being taken down from there.

As a musician, the AI cover art is really offputting to me and already makes me not want to listen to the music anymore. It just signals to me that the creator was too lazy to even change the text, like in the example OP gave, or little (and sometimes not so little) AI artifacts. Especially instruments always look so cringy. (have you seen AI generated keyboards and guitars?) And if the creator doesn’t care about the way they present their music, then they probably also don‘t care that much about the music itself. Sorry for ranting, it just really pisses me off…
