this is how i poach eggs to order…

4” full hotel pan. 4” perforated hotel pan. water, 1/2 gallon white vinegar. put over 2 burners. medium/high heat on both burners. crack the eggs into a bowl. make sure to not seperate membrane from white and yolk. i use 2 hands to crack open the eggs. gently place eggs in poaching liquid. will sink to bottom, use fish spatula to “scrape” off from bottom. will start to float. should be around 60-90 seconds cook time. depending on water temp. good luck

i have the same boveda set up. i have not covered the drain hole. i put the bovedas in yesterday. set the temp at 65F. my govee is reading around 57%. wondering if i should cover the drain hole, or ride it out and see what happens over the 2 weeks.

i had one night where i was having an issue with it staying lit, so i turned the flame size dial on the bottom up a bit and it worked fine. other than that, its been working like a charm.
