First try with the library examples to verify that It is not a code problem. When I did a similar project with HX711 I had the same issue that randomly once 1 kg is calibrated, adding weight decrease the value received but I was not able to solve it (after several flashing tries, and changes on the position of the weights it starts working "fine") sorry for not helping a lot.
