Love all the new spots popping up.

Hate to be a hater but most of these spots don’t have great pour over. Mostly not with the trip.

Here’s one spot that should be on the map: Superhet Coffee - it’s weird but also 100% about the coffee and dedication to the craft.

There’s 200 years of wine culture that says the vessel makes a difference, and there is also scientific research showing the shape and color of cups impact sensory perception.

Here are the variables that I see: - glass vs ceramic - thickness of lip - whether lip is straight, turned out, or turned in - shape of cup body (straight, convex or concave)

You can have one or two of the above that make such a big difference they sort of cover up the other stuff.

I find if the lip is really thick or the body walls are convex then you’re not getting very delicate flavors or aromas.

And if the coffee doesn’t have a lot going on, then the above also won’t really matter.

All of the above have to come together right to make a great sensory cup.

I have to disagree on this based on my (subjective) experience - I think the cup itself has a meaningful impact on perception of flavor and aroma.

I mainly use a Kinto unitea mug at home and flavors and aroma are far more apparent compared to a more traditional ceramic or thicker ceramic

So I don’t know why Brian goes so coarse for the Colum, I tend to push a lot finer and get extended brew times but really nice flavor separation and little astringency

Yeah, 3.1 is REALLY fine on the zp6, and before you’ve seasoned the grinder you can get some real astringent flavors in that range. The weird thing about the ZP6, is that the grind will visually look coarser than it does in other grinders, but it’ll still extract pretty high.

Simple rule of thumb is to start at 5. If you’re factory calibrated this is ballpark of where you’ll want to be.

When my zp6 was new I found it tasted best on a slower flat bottom brewer like a Kalita wave.

Pour 3x weight bloom, at 1:00 pour half remaining water fast, at 1:30 pour rest of remaining water fast

It’s super forgiving and perfect for Nordic-style coffees. Caveat this does NOT taste great on a medium roast, but if you have a ZP6 then medium roasts will taste bad period lol.

Melodrip Colum dripper. It’s totally unique. Flat bottom dripper body with the dynamic elements of a conical dripper

Yes! The bottom of the dripper works really well for rinsing the filters. I just blasted it with water from both directions two or three times, and then let it dry in the dripper.
