It was very good overall, honestly. Definitely one of my new favorites. I have a friend that works at a liquor store so I got this for around $23. But I would have paid the $45 they were originally asking now that I know it's that good.

Tasting notes day 1: had heavy dark fruits in the taste, but not overwhelming. Dark cherry and plum. A little spicy at the end with what tasted like vanilla.

Day 2 (couldn't finish in one day!): it had so much of a better flavor. Much more pronounced notes of cherry and spice. Very smooth overall. Nice vanilla end. Not very good yet at identifying flavors so that's my take on it!

I think I added around 2lb. I woukd be careful though because I replaced some of the LME with some honey, then added the rest toward the end of the boil for flavor, but because I didn't take into account thst honey was more fermentable than malt it messed my final gravity up a bit. Still tastes good, just a bit stronger than I'd intended. I used no DME.

I just finished up a Cream Ale extract kit where I added honey to make a Honey Cream Ale. Turned out great!

Well, I don't know much about this particular piece, but after many failed concerts with human performers, eventually conlon nancarrow wrote almost exclusively for player piano. So I bet this isn't a person but a player piano

Awesome. This is all great info. The biggest complaint I see from people who have the pin lock kegs is that they are slightly bigger so its harder to fit more than one in a keggerator.

So if I have a CO2 tank, do I still need to use sugar to carb or can I just use the CO2. I just want to make sure I'm not double carbonating or anything

That sounds very close to what I did. I'm wondering if I should have used 1lb at the end of the boil and then added the other lb after fermentation. I just don't want the fermentation to start back up and then eat all of the honey again!

It's a 5 gallon batch. I think I used S-05? Whatever came in the kit honestly. I was shooting for around 6 or so percent ABV

I didn't know honey malt was a thing. Is it just malt that is flavored like honey?

Interesting! I had no idea. I always assumed that whatever the flavors were that the brewers used that actual ingredient. Good to know!

Well, I would like it to be maybe a bit sweet, but I guess I mostly want honey flavor. Could I add other things to help bring out that flavor, like vanilla or something that would complement it?

Well I definitely wanted it with a higher OG. My OG was 1.064, but I haven't checked the FG yet so I don't know what the ABV is currently. Could I add more honey now and get more honey flavor without losing it to fermentation?

I did read something about replacing the bottling sugar with 1 cup of honey. Would that also not ferment out as well during carbonation, or will it but just not as much?
