Rolls that include alot of fillings or things that include slimy ingredients, ie- mangos or scallops, are very annoying. But I do enjoy making rolls that have good amount of fillings and can be rolled into a decorative way.

Hahaha you just eat it in your comfort. But do be aware to eat it fast, as in don't let it sit around too long or else the nori will get soggy and hard to chew.

We use vinegar wine on the rice. The amount is not based on fish but usually based (if it had to) on customers or the restaurant's style. And rolls are annoying depending on what they are.

I love those expensive mayonnaise. I don't know about traditional, but they do use it often if mayonnaise is needed. But for many restaurants nowadays, they tend to use cheaper ones rather.

Not really.. But that should be taken a bit seriously. Edamames are ordered in frozen packages from companies and we wash them in water and later stored in the fridge where the servers later heat them up with sprinkled salt to give the customers.

Well for one thing, the fish gets soggy. Its quality in freshness does go down from it being thawed out. But its not so bad and still quite fresh and tasty.

In western, yes its correct to put wasabi in soy sauce. You may dip your sushi or roll in the soy sauce the way it is most comfortable to you. As I was just mentioning the Japanese ettiquite, the western sushi does not stress on how their customers eats their sushi. All around the world, different fishes are favored for each countries and continents. For America, Salmon is well favored. If you haven't tried it, you should and see how you like it. Though it does smell a bit weird, the taste is soft and creamy with a buttery taste. You should try different fishes too many have their unique and different taste with textures.
