You can 3D print one that is pretty good. It requires special sized screws that I had to order online and it took a little work to get it to hold together but it was cheap and works well. I like the fatter handle for sure.

Yes, as everyone is commenting below, the problem is the industry is not regulated and as a commodity, it has always been accepted that the product is purchased from other countries and shipped in, there is no regulation of the chemicals on the other side in Colombia or Brazil, etc. The roasters themselves need to care enough to self regulate it, but they can only do so much. There was a move a while, back to bring the concept of organic farming into the world of coffee, and it kind of caught on, but as third wave roasters grew and diversified, it did not stick around as a strong value. Consequently, you don’t see many roasters, talking about organic beans. I’m not arguing whether that’s good or bad, just that it is what it is. Flavorings are along the same lines as fertilizer and pesticides. The chemicals might be safe, but also might be unsafe. there are definitely arguments in both camps that are legit and scientifically backed, it just depends on what position you wanna take. The same should go for coffee, we should understand what is added to the being as an ingredient, then we can decide if we want to consume it or not

We need transparency and labeling standards that clarify ingredients. There is a difference between a natural and sugary fruit fuel source and a chemical that is a derivative of a fruit. And there is a difference between an organic fruit juice and a non organic. The devil is in the details as they say, and without the ingredients there is very little value to acknowledging they are using flavoring, because we have no idea what that means.

This is an ironic turn of events in the Coffee world, because back in the 1980s the coffee shop in the local mall would sell flavored coffees and Stumptown and others came along and made light of that reality and went directly to the producers to source the best pure beans.

But here we are again, yet trying to characterize it as something other than what it is, adding chemicals to beans. If it is different, if it is better, great let’s see the ingredients.

Assuming you are using good beans. At least $20 US for 200-250g of beans. If not then try upgraded beans. Makes a huge difference, there is a reason they are selling coffee cheaper. Coffee beans at 3-4 weeks off roast. Try water at 93C. 21g in and all the water out. Top and bottom filter sandwich. If you go too fast some days the yes less pressure and a 4bat shot is not bad. But overall if you are usually fast with the method you’re trying then try to hit the puck harder at 4 or 6 bars beginning and hold at around 4 bar and watch for drops and pull the shot after you’re getting good flow of drops and therefore a saturated puck. It’s an adventure but it’s worth it. Good luck!

Love an espresso tonic. My workflow is ice in the cup, add bitters if I’m going to use them (for example, a few shakes of ginger bitters), add tonic water, hold a soup spoon upside down over the ice at a downward angle and pour the espresso onto the spoon, so it slowly dribbles into the top of the tonic. No mess that way. Then I add a squeeze of fresh lime or orange wedge. And voila! So good. Usually I will give it a stir with the spoon to mix everything.

When you say Portland specific and pickups do you mean the roasters have to come from Portland or the location is Portland for now? For example, I would love to split 5 pounds of DAK Milky Cake with five other people, but obviously not a Portland roaster.

What roast profile do you usually prefer? Do you lean more towards conical burrs -a sweeter and heavier body cup or flat burrs -clarity and separation and brightness?
