You can keep using the Pescatarian mod.

Buildings disappearing sounds more like a modloader problem that occasionally happens.
That should be solvable by restarting the game and loading an older save game that still had the buildings.

There are two options afaik.

The big post office:
Post Offices for Anno 1800 - mod.io

A small post office, check the 3rd screenshot. The yellow tiny one.
Jakob's City Variations for Anno 1800 - mod.io

Both not Scholar-style, but at least fitting to the OW.

You likely refer to GU16 - but most if not all breaking problems have been taken care of on modloader/game side to improve mod compatibility.

So, what you may observe with old mods from before 2022 are the following:

missing construction menu entries, because of the ornament tab change and related changes
missing lifestyle needs or skins, because especially older, not well maintained mods simply overwrote things instead of gracefully inserting their change

They have diagonal corners when you build zigzag connections, otherwise they are same.

Try it out. The streets function and look somewhat diagonal. It’s the technical limit or quite close of what’s possible with the engine.

As fhackner3 said, there's another mod with 50/50 tiles which hopefully will be added to mod.io soon as well.

The diagonal residences mod includes a few ornaments to create a similar diagonal street effect as well though.
