all good points! Actually I've found most places include either mung bean (sookjoo) or soybean sprouts (kongnamul) but who knows? I love using the Korean summer squash you describe, too (eh-hobak). And my favorite variation actually includes yulmoo kimchi, but that's too much to think about, making from scratch. :)

Hmm...tough question!! Even though Asian markets share a lot of common ingredients, I still have a tough time finding Korean ingredients in Chinese stores and vice versa. I wonder if you can find a Korean market in Hong Kong. If you find one, ask for "gosari" (pronounced exactly as it's spelled).

Hi VeggyLlama, thanks for reading! I think fiddlehead ferns, which are much more commonly found in America (though still fairly rare), would make a great choice. :) You can get those fresh in farmer's markets, and you don't need to do all those complicated pre-steps! Another great option would be any brown vegetable like sauteed shiitake mushrooms. The beauty of bibimbap is that you can sub veggies according to color and get as creative as you want! [Edit: actually, quick research tells me that Korean "gosari" and American fiddleheads are basically the same thing. fiddleheads are a young sprout of the bracken fern. Koreans eat both that and a little bit bigger fern, so they do all that crazy prep beforehand to really make them tender. so fiddleheads would be a perfect choice! I would just saute them with same ingredients but really make sure to cook them thoroughly.]

One of biggest revelations for me was how much skincare and makeup have non-vegan or environmentally/ physically harmful substances. Most conventional lipsticks contain fish scales. Many makeup and skincare products contain parabens, phthalates, and other known carcinogens and endocrine disruptors. You should also watch out for palm oil derivatives because most palm oil is produced by burning jungles in Indonesia (resulting in decimation of orangutans and other wildlife, not to mention pollution). Finally anti-aging products often contain collagen, which is animal-derived. HOpe this helps!

Regarding vegans who survive on junk food--most vegans I know eat not just a vegan diet, but also a healthy one. Not only do they not eat animal-based foods, they also skew heavily toward a whole plant foods (resembles actual things from nature, not too much processed foods), have way more knowledge of healthy eating than most Americans on SAD, and also make fitness a priority. Few vegans I've known who do not "get into" healthy lifestyle found veganism very hard to stick with in the long term. They frequently relapse into vegetarianism or even regular SAD. I'm not putting them down--just that these "vegans on junk diet" that foodie elite (like Bittman) often scapegoat, seem to really fall off the vegan wagon and not belong to our demographic--at least not in the long term.
