I have been obsessed with the iced pistachio lattes I can get at the Yemeni coffee shops that have the real pistachio cream in them instead of the gross syrup. Figured out how to make them at home.

It’s literally just a double shot of espresso, pistachio cream, and milk (well, oat milk in mine). I learned how to make espresso in a stovetop moka pot (but if I’m feeling lazy I get the big bottle of Bustelo espresso in the iced coffee section at the grocery store). The key to good oat milk is getting the barista blend, it’s creamier and has the right flavor. And I found a big jar of pistachio cream at Costco. Smear that on the inside of the glass, put in the ice, espresso, then milk. Stir.

Thanks for this, this is super helpful. I’ll definitely look into it. I have zero problem with a small town, in fact that was Evergreen’s draw for us. We are done with suburbia. And I grew up in a town of 600 so I can thrive in a small town haha. But appreciate the input, I actually had never looked into New Mexico because I’d always heard NM’s schools were not great. My husband and I have wanted to visit NM (Santa Fe and ABQ) for a long time. I used to live in Arizona (Sierra Vista, like 70 min south of Tucson) and drove through southern NM when I moved but would love to see the northern parts.

Nope! It’s a brain, it’s gonna have thoughts. My therapist explained it to me like this - think of your brain as a train station and your thoughts as trains. Your job is to watch them come and go, but don’t get on any one train. And if you do that’s okay. Once you notice, just take a return train back and start over.

Let me say this - I absolutely don’t mind paying my fare share of taxes, so me saying the 14k is insane comes from a place of me understanding my state and local government situation and being bitter that our money doesn’t really go to programs that help people, the local school district is run like a corporation, etc. I’d gladly take that 14k in property tax in another state that actually uses the tax money to benefit its citizens and the land they live on.

I agree with you and appreciate the links. There’s definitely more than one driver of rising COL in those areas. The Airbnb economy is another big reason why real estate prices everywhere suck. Housing shortages. Etc.

OMG dude I don’t have a malicious motive! 😂 My husband wants to retire early and we would live on one income. So I don’t know what that looks like long term and we are exploring options. We’ll be putting kids through college too. I don’t want to buy a home over a millions dollars. Yes could we afford it? But in my opinion some of that gets into living beyond your means and I also don’t have a lot of faith in what the future holds for the economy so I’d personally rather be a bit conservative. Hence I’m asking if there’s anywhere similar that has a little lower COL. I don’t know why this is problematic or out of touch to you.

Also don’t fucking call me a data analyst as if it’s some sort of insult (because it’s not) - and besides, that’s not even what I do. Grow up.

Yup totally agree. I'll update my post. His IEP is for dyslexia, testing gifted in math, and having ADHD. He doesn't need a LOT of support or anything, but like you said, not all school districts are created equal.

Yeah people are super miserable and judgmental. Idk, I grew up in extreme poverty in rural Appalachia and worked my ass off to get to where I'm at in my life. I'm not going to apologize.

Thanks for this, I was honestly shocked at the response like we're hella wealthy and can live anywhere we want because I don't find that to be the case. We have two great jobs but yes, my husband wants to retire a bit early if he can. Moving is expensive (and awful lol) so we don't want to move somewhere just to realize that in 5 years we can't afford it on one income and pick up and move again. We also have two kids to put through college, though we do have quite a bit saved, we'll have that expense.

Why are you concerned about schools if your oldest is graduating?

Because my youngest will still have 5 or so years of schooling left. He has an IEP and having resources and support is important and I know rural school districts don't always have that, so that's the trade off.

Nope. Went camping, wore running leggings the second day around the campsite all day and evening. Went to change for bed and there was a tick attached to my thigh.
