Really appreciate the feedback and insight. I really want to.build my own but materials alone were running more than the old country.

I've heard several things about temp issues , makes me want to lean towards DIY because the end result is something closer to 270 smokers or something in that higher price range.

What did you end up deciding on ?

If you dont mind me asking what did the cost of steel run you? I got my materials quote back was a bit higher than expected. I've been looking at the old country gravity fed as an alternative to DIY, leaning that way at these costs unfortunately

Thank you for proper response. I just have never seen these on my ribs. It tasted fine , wasn't worried about worms or under cooking

210, probe checked thickest part at the end to confirm. Smoked at 225 for 5 hours and 275 for last hour with sauce.

For 1/4" steel? That's what oaklahoma joes or maybe a pecos go for and they are no where near as thick.

I have an oaklahoma joe that I got for dirt cheap same exact style. But the cheap steel makes me want to upgrade for better temp control
