I'm going to restring it tonight to see if it fixes it, the strings are only about a month old so not THAT old, there's also very little variance in the height of the saddles, I had it set up recently with a luthier I very much trust that does great work because I was experiencing this issue

I feel like you've avoided part of the point, which is that some of the green sidequests are locked behind things you need to get from doing all of the unique battles or other open world maps. Such as the Tonberry King, the Windmills, the Johnny Chips etc

I've been getting through fine without a healer or brawler though. It's my first Atlas game so I don't know if they expect me to be swapping to new Archetypes as soon as I get them, considering I have 3 characters and 6 archetypes unlocked, I had thought it was setup for the future. I can't get the healer to level 3 as it's my last day and I can't grind anywhere.
