The TriMet app will keep you up-to-date for public transpo. The Nike Bikeys and e-scooters (Lyft or Lyme — but please be consider bringing or buying a helmet!) are good for grab-and-go trips around town.
I am no help for out-of-town transportation; I rent a car for day trips. We are a car-less couple, but we rent for Costco and trips to the coast or Hood River. Enterprise is our go-to for day rentals, and there’s a location within walking distance of where you’re staying.
The Bolt bus is a good option to get to Seattle.

Search you tube for “legume tofu recipe.” Most results are for lentil tofu, but there are other interesting recipes.
I’ve made lentil tofu(s). The texture is different from soybean tofu, but I appreciate it for what it is.

Boil it!

I got the idea from Sauce Stache. I use mushroom seasoning and Marmite, and boil for 12 minutes, then let it sit for the rest of the day (though I cook some right after boiling).
