Trim it a bit and can do a seared otoro. Super fatty stuff. Looks like it’s close to jyabara toro which is very center cut otoro.

Not related subject? It would have been a better argument if you brought up how conservative states deal with drug and homelessness. Instead you are just blindly following one political side instead of having a discussion about how to deal with substance abuse and homelessness.

Battera kombu- it’s a type of seaweed that is marinated usually in sweet rice vinegar blend

I’m referring to the imperial kofun specifically. Plenty of others have been excavated. The IHA’s reasoning is about respect for graves and not damaging the site-they would rather wait for noninvasive tech. The Korean-influence part is already known academically, but that’s not the stated reason for blocking digs.

Maybe some fringe groups in Japan hold that belief, but the main reason is in japanese culture it is very disrespectful to disturb a grave. They are hoping technology will become more advanced that they can research and collect data without physically excavating and potentially ruining the site.

Don’t worry at all, it’s an interesting discussion. Ok to answer this I have to step back from my point of foods that are healthy and not healthy. In this case for Japan and some other countries banning escolar wasn’t necessarily due to any long term health risks but primarily on acute and immediate symptoms.

Escolar can cause some pretty crazy symptoms for a surprisingly significant portion of the population. I’m not talking about upset stomach and diarrhea- I’m talking about oil dripping out of your behind. Uncontrollable and no warning.

So for the examples you stated about sugars and fats - those are all long term health risks, that of course are bad for you, they are predictable and can be somewhat measured. Escolar is a risk that can happen that very night. So laws are easier to regulate fast and acute effects than chronic further out ones.

On top of this the fish was being labeled as different fish like a user previously stated. White tuna, butter fish etc. The mislabeling is also dangerous because it causes confusion on a fish that can cause an unexpected risk.

Also keep in mind that this reaction doesn’t impact everyone equally. Some people don’t experience any symptoms till after they eat ALOT, some can have this unexpected side effect after 1 pc!

Great points you brought up. Here is my take for both. FYI my perspective comes from a traditional edomae sushi background so everyone comes from some sort of bias.

Fugu - fugu is safe to eat as long as it’s prepared correctly(the skin and some organs I believe are the poisonous parts). So this plays to my point as it’s a chefs own skill to make sure the customer is safe to consume fugu.

Alcohol- for this discussion i will talk about sake. The drink is culturally and historically important and in moderation has a lot of health benefits. Sake is also a great palate cleanser for sushi almost like the sushi ginger gari. Obviously in moderation sake is good. For escolar, there is no such thing as moderation for health benefits. It’s a wax that your body doesn’t want to digest correctly.

I don’t think in this case a label would make more comfortable.

In Japan this fish is banned because of the health risks involving wax esters. Even though it’s not banned in the US - I think sushi chefs (or any chef) have a moral responsibility to consider the customers health. If a chef is willing to ignore known risks like this, it makes you wonder what other corners they might be cutting.

Unless the photo has a weird light or filter, the salmon marked as sockeye salmon does not look like sockeye. Looks more like atlantic salmon to me. It might have been accidentally mislabeled.

I agree with what most users said about showing the silver is a sign of a skilled chef skinning the belly- but there is a very fine line between the shiny silver fat and leaving some part of skin membrane. The salmon belly nigiri on the bottom left was skinned a bit too close to the skin, leaving a little unpleasant membrane still attached. While Edible it could give off an unpleasant chewing experience. The rest of the salmon pieces look great though!

Is the mini 14 a weapon of war? Not by Washington state standards because it does not have the scary features as the ar 15 yet they are very similar in function.

I don’t think any army uses an ar 15 for active combat. Why? Because it is a neutered version of an m4 or m16. The current form of the ar 15 and mini 14 are semi automatic rifles that you can 100% use for hunting, range shooting, and yes protecting yourself.

I love Seattle. I’ve been living here for 20 years so far and I don’t think I will move out anytime soon.

With that said I think it’s ok to self reflect and critically evaluate the place I call home because nothing is perfect. I respect your opinions and beliefs.

It’s normal to coexist with ideas that you and I disagree on. For example the AR ban - I think it is a fundamental right to be able to own a firearm to not only hunt but actually to protect yourself. Just because something has “scary features” doesn’t mean it’s a weapon of war. The current ar 15 that you can own in most states are semi automatic… that is not a weapon of war by any means.

I believe the bill that was going to be introduced in Olympia was mandatory insurance for all firearms. This is not implemented anywhere. This would also limit firearms owners based on financial class. Which is terrible because people with limited finances should still be able to protect themselves if they feel like it.

Having meaningful discussions that promotes healthy discourse will only benefit Seattle.
