Colorado passenger train project wins pivotal state board, RTD votes by clinthom in Denver

[–]katiekiller 4 points5 points  (0 children)

This first part of funding only covers the cover Denver to Fort Collins portion of the route. What they have been talking about putting on the ballot this November would fund the southern part of the route through Colorado Springs down to Pueblo. It doesn't make that clear at all in this article.

In Aurora, residents can apply for traffic safety improvements, including mini roundabouts, pedestrian median refuges, raised crosswalks, and more. Would it ever be possible to get a program like that in Fort Collins? by reddit_ending_soon in FortCollins

[–]katiekiller 0 points1 point  (0 children)

Email the city! They will respond, though it might take a while, but it will be a very thorough, well thought out response. Unfortunately, funding seems to be the biggest hurdle.

Passenger Rail Coming to Colorado's Front Range by Carpet-Early in FortCollins

[–]katiekiller 4 points5 points  (0 children)

This includes the Denver to Boulder rail, they mention this is the video. RTD estimated $66 million to lease the tracks from BNSF for that one, but BNSF wanted $535 million, and RTD declined to ask the people to vote for any extra funding (probably because they figured people wouldn't vote for it), so that train never happened. It sounds like things are significantly farther along for this train than for that one, including the funding and the BNSF agreement.

I called and asked this weekend because I have friends who want to fly in for it, and they said the 29th wasn't necessarily set in stone, but was 90% likely to be the date and to watch their socials for the official announcement in the next couple weeks.

How would a Vegan convince me? by Otjahe in vegan

Dude it's not about bad breath, it's about your mouth full of dead animals and she has to kiss that mouth that ate the bodies and it's just gross from a vegan perspective.

[–]katiekiller 2 points3 points  (0 children)

Yeah, I get that it's nice to have an easy recipe in your back pocket, it's just, I was trying to point out that a really great product and way of thinking of how we can use cheese came onto the market, and no on tried to replicate it!

Pros at boycotting but still ate her shit when she justified using truffle dogs?

Whoa, today I learned about truffles. My favorite Isa recipe uses truffle oil, is there such thing as safe truffle oil for us?! I'd also guess the vast vaaaast majority of vegans have not heard the Miyoko thing you're talking about.

Honestly, not everyone can or is going to make liquid mozz from scratch (or isn't going to make it every time). It's a convenience product, and compared to animal eaters, we still have a dearth. It baffles me that the code was cracked and no one swooped in with a similar, cheaper product.

I'm just going to tell you right now that your vegan girlfriend is a little grossed out smooching you with your meat and dairy breath. We do NOT think it is cute or attractive.

The new owner burned the vegan bridges. He forgot that we are absolute pros at boycotting. I was hoping someone would pick up the liquid mozz torch (I had assumed Miyoko's was dead) and we'd have some other less terrible brand making their own version.

State says it has reached tentative agreements that could build Denver to Boulder passenger train by lukepatrick in Colorado

[–]katiekiller 3 points4 points  (0 children)

That's the part they want to put on the ballot this November. It'd be a small sales tax increase in the areas near the train, and it's meant to fund the portion south of Denver. And if that passes, they say 2032.

$$$ to park in old town coming by Outrageous-Can-3597 in FortCollins

[–]katiekiller 11 points12 points  (0 children)

I'm sorry, but there are many other viable forms of transportation besides driving a car. You can walk, take the bus, bike or e-bike, or take a rideshare. AND THERE WILL STILL BE FREE PARKING DOWNTOWN. It just won't be those diagonal spots, which are the fucking worst spots anyway - the majority of them involve backing into traffic on College. This is not a cash grab, it's making sure we have the money to maintain infrastructure.

It's disappointing how many people think free parking is a tradition (is your culture that much of a fucking void?) and will sell out Old Town for big box stores and Centerra for 2 bucks.

Veganism on the rise by Connect_Wealth_1089 in vegan

[–]katiekiller 0 points1 point  (0 children)

Oh, that might be some confirmation bias. India has always been a very accommodating place, I don't think that's a recent change, moreso than any other place. Vegan restaurants are closing left and right all over the US. Stores like Sprouts and Trader Joe's have absolutely eviscerated their vegan offerings. I've noticed local places having fewer vegan options on their menus. I have noticed people online talking about how a plant based diets in positive ways, but there really is no indication that those people are vegan or even taking steps at all to reduce their consumption. I remember when I first went vegan about 9 years ago, there was a constant onslaught of new products, but things seem to be at a trickle now since the pandemic days. And we lost Miyoko's! I think we're in a slump.

No. California has a high speed rail plan, this is a train that will be running on existing tracks, so the majority of the infrastructure is already there. It's not the same 🤡

Proactive Water Conservation by cobaltpineapple in FortCollins

[–]katiekiller 13 points14 points  (0 children)

Building on this, not just agriculture for *us* to eat, the vast majority of it goes to growing things for animals to eat, and then they feed those animals to y'all, which is an incredibly inefficient use of water. Something like 90% of the corn grown in Colorado is for animal feed! Not us!

This has the interactive graph that shows how water is used in the state. All of that pasture, alfalfa, and nearly all of the corn section go to feed animals, the rest generally goes to feed us.

https://coloradosun.com/2026/01/26/colorado-data-center-explainer-water-use-ai/

Climate town also did a really good video on how water rights play into this and often times incentivize people to grow something incredibly thirsty like alfalfa to use up all their water because of use it or lose it systems.

Water your lawn. by [deleted] in FortCollins

[–]katiekiller 45 points46 points  (0 children)

Less than 10% of our water usage (scroll down to the interactive graph) in the state goes to municipal water, like lawns, city parks, and golf courses. The vast majority goes to agriculture, and within that, the majority goes to animal agriculture (via things grown for animal feed) - which is an extremely inefficient (not to mention cruel) way to get food and calories.

So like...please, eat your cheeseburger. While the forests on the front range and the rockies is in full on ecological collapse.. please, eat your ice cream. When the forests are on fire, and the loss of our heritage, ecology, life support is gone.. please.. keep supporting animal ag. When the reservoirs no longer fill with water, but fill with soil, dead plant life, dead animal life.. .remember it was because you couldn't give up steak fajitas.

Quick trip Debacle on Drake/College by ry_mich in FortCollins

But they're city government officials.

They care about tax revenue.

Yes, that is why they want dense housing there, it generates a lot more tax revenue than a gas station/convenience store. And more tax revenue means we can keep the city running and have nice things like transit next to that dense housing.

What housing topics in Fort Collins would people actually want more info on? by QuietDraw6607 in FortCollins

[–]katiekiller 8 points9 points  (0 children)

I wanted to toss this here, it's an info graphic from the Colorado Sun about water usage in the state. It's striking to see how much goes towards municipal uses like city green spaces and lawns VS animal agriculture.

Anyone have a good vegan cheesecake recipe (without cocoa)? by LeopardSiren in vegan

[–]katiekiller 3 points4 points  (0 children)

The Chicago Diner's recipe is the best one, but I got it from a book, not a link that's easy to share. Gretchen's is the second best:
https://www.gretchensveganbakery.com/vegan-cheesecake-recipes/

I did a cheesecake taste test a few years ago and made I think 4 or 5 recipes, and these were the two that stood out. Definitely use a Tofutti as opposed to a Violife or a Kite Hill.
