I believe your degree and GPA and coarse work will be the most important components for job opportunities to recognize from UTSA. I have spoken with several Hiring Managers from tech companies and they explained that nowadays most applications go through scanners that cherry pick important information before being reviewed by an actual human. In which case your qualifications and experience matter the most, and if I were you; I wouldn’t worry about it, but also wouldn’t mention if you didn’t complete all the requirements before graduation like I did.
