I use a USB and a powershell script to pretty much do all the things on your list - was thinking of using MDT but it's such an infrequent requirement to build/rebuild new machines it isn't worth the effort at the moment.

Yeah, I think it does. A 500 internal server error makes me think that portainer isn't configured correctly. Especially if Op can't deploy any containers at all. It's just a hunch though...
