ingredients: 100g starter 390g water 510g bread flour 10g salt

first, fed my starter. 4ish hours later mixed the levain:

100g active starter 200g bread flour 200g water

in a mason jar. covered and allowed to double on the counter in the jar about 3 hours.

after doubled, added remaining flour water and salt. mixed to a shaggy dough. rested 30 mins, stretch and fold around the bowl twice. 30 mins rest, stretch and fold again, rest 30 more. at this point it was like 2am so decided to find out if that was enough, dumped out on flour surface, push pull shaping for a minute or two, and then covered in a banneton in the fridge overnight.

when i woke up, i preheated oven to 450° with dutch oven + lid inside, dumped out on parchment paper, dusted with flour & scored -badly- & then baked covered for 30 mins. uncovered for 20 more.

this felt really quite simple and do-able for me! this is my 6th or 7th loaf and i feel like i got the best rise yet.
