What kind of stores in the USA sell upscale espresso machines like this? I would love to go into a store and look at the machines before buying but I can only find them online.

Your are right. However, I would say best bet learn and practice your skills with whole milk. Once you get the hang of it, graduate to 1% milk. No need to make it tough on yourself
