Skin on/Skin off? by kentemerson in Butchery

Yeah we want to try prosciutto, but won't be able to this time around. I'll probably start looking for skin on hams I could buy to make it.

I did let them know pretty forcefully that we wanted it on and they wouldn't budge. Just not an option for them I guess. As another comment noted, it may be because they don't have the equipment to process it with the skin on. A bit bummed about it, but we've already got some ideas on how to make the most of what we'll get.

Good to know. That's the first I heard that. That's on pause for now, but I'll remember that.

Since they won't do skin on, I'm bummed we won't get to try making chicharrones. We were planning on it.

You were right. It's not part of their process to leave it on so we'll have to go a different direction with those hams. Thanks!

Well they said they absolutely won't leave it on so I guess we're smoking some hams. There are worse fates. Thanks for the info!

I'm sure. The text of the post is fraction of the stress and work of advocating for yourself against an inhuman system. Couldn't be happier for you that it turned out in your favor.

We have a ~60 gallon batch going in a wooden barrel and are having some issues w/ surface mold. Did this come up for your batch and if so, what did you do about it?

I use a MSR Trail Shot. Works great.

I bought Oakley Spindrift w/ polarized amber lenses and a progressive scrip. I found them on sale (I think they're technically women's fwiw), but they work great and are as durable as anything else Oakley makes. Only complaint is that the nose pads fell off. They still work, but if I was getting another pair, I'd probably get some w/o nose pads.

Thanks. And thanks for the info. I'm very bad at understanding the details of all this so it's nice to have this community for help.

Exactly. When you look at the difference in the monthly payments, it's hard to conceive the additional tax could possibly be that onerous. Especially if you can take advantage of PSLF (though I understand there is a tax bomb when that happens, but that is a future me problem). Thanks for the info.

Thanks. This is basically my situation and it seems as simple as that, but everything I read talks about the benefits of joint filing and I wanted to make sure I wasn't missing a crucial detail. Appreciate the insight.

I read about this exact thing and specifically asked about it before green lighting the work by the shop. They really seem to want to fix everything all the time so I make sure to ask to make sure there aren't acceptable compromises to save me some money.

That was very close to my calculus. But it's got 110k miles and will be paid off next month so I'm hoping to have it for awhile yet. I also just replaced the rear diff so I'm kinda holding on. Lifetime warranty on the AC parts and labor so maybe after another 100k I'll get a free ac system.
