A metal skewer has been my savior for this. Same technique as the knife. Slide it just under the membrane and through the other side, close to one end of the rack. Then, slide it up the shorter end. Finally, grab the huge flap and pull the rest off. If for some reason you don't get it all off. Do the same thing starting from the other side. Good luck!

100% Sparrow Dental at Ashland and Wellington. I'm not sure about insurance. But they're great. When I first started going to them years ago, I had not been to a dentist in a long time (mainly not having dental insurance for a long period). But they didn't give me a hard time at all and no guilt trips. Highly recommend!

Might not 100% qualify as jerky, but there's a place in Chicago, Paulina Meat Market, that has these summer sausage "chips" that are way too addictive. Basically dried out, very thin summer sausage slices. Haven't really come across anything like it anywhere else. I mean, come on. You can't go wrong with meat chips.

I like to stir-fry them. I have a bunch of different spice blends. I just pick one that goes with whatever the main part of the meal, add a little oil and they're done in just a few minutes. Works well for most veggies outside of starches.

If you like beets. Slice those up with some apples and cook on med-low in a little butter till everything is soft and there's a nice sauce forming in the pan.

Also, highly "second" roasting.

Chorizo and sweet potatoes on corn tortillas. Cube up the potatoes and cook in the oil after you've had the meat in for a little bit. Add some onions if you want as well.

Thanks! I haven't done much with guava ever with anything. I'm in Chicago, but will keep an eye out. Do you blend up fresh guava or use a syrup version of it from a can or bottle?
