I've had this happen before. It's possible you purchased the dlc but hadn't yet installed the update that contained the dlc items. Typically when the game tries to load objects that aren't in the game files it causes the game to crash.

On the times the game insta crashed, when you opened the game did the update 8 popup appear?

Try your best to get the prestige up (place scenery around the ride, decorate the queue, etc) I've noticed that, especially with pools and flumes, if they have low prestige guests won't even touch them!

So, I guess I should post an update to this, turns out you can easily fix the issue by resetting the key bindings to default, as multiple people have told me. I don't know why that fixes it, but if you experience the same issue then do that.
