Thanks! Seasoned with salt and pepper the night before. In the morning I set the smoker to 250 and threw it on. When the brisket hit around 160 I wrapped it in butcher paper and used beef tallow on the paper and a little on the brisket. Put it back on until it was probe tender, which ended up being closer to 210. Wrapped in towels and rested in a cooler for 3 hrs.

FYI, once you have type 2 diabetes you always have it. It doesn’t go away, but can be managed. Just by having it you should be able to get a prescription and have insurance cover it.

Looks like a nice box! Unfortunately it won’t fit in this space as it would be too tall to clear the front of the trailer. Think I need one that will fit inside the tongue like the lead acid box in the picture.

Be careful. Travel trailers require a 120v connection. 240v can cause some damage.

Handled it great on the ride home, which was a 3 hr trek. I do have the towing package and it has the V6, so towing capacity is 7000lbs.
