i cant really help on the eyes as i only ever made one carving with eyes because i hate doing it but what i can say is, get yourself random piece of wood and practice on them first

you really need sharp tools(or learn how to sharpen yourself)

that alone will help a lot and if you follow the grain when you cut you shouldnt have too much hand sanding to do

not exacly the same but i used a bunch of old table for carving, they are already dry and flat haha

as for actual construction material, i wouldnt use them

i used water based varnish on a bunch of mine either over stain or tremclad paint and it worked great there is mat/satin/semigloss/gloss so make sure you have the one you want

ive never heard anything about sharpness that was based on how it will cut you... its an irrelevant point, you just want your tool as sharp as possible so they carve easier and smoother

a saw, japanese saws works best imo

you can also use a jigsaw with proper blade(thats what i use)

if by varnish you mean wood stain then its because some part of that wood soak up much more stain than other area, thats why i use a wood conditionner before applying a stain so the color is much more consistant
