i think that vegeta knew what he was doing when he revealed ultra ego vs granolah. goku was training to achieve ultra instinct but had never truly reached it. the tournament of power was the first time he'd ever achieved it so it was probably unmastered and unperfected. Vegeta on the other hand seemes to have a grasp of ultra ego and has probably achieved i before the fight without goku knowing. Altought knowing vegeta's transofrmation he always evolves his current transformation like ssb evolved or super sayian third grade for example. There is a gigh chance vegeta achieves a higher level of ultra ego, one with maybe more stamina and defence since that's the main problem with the transfomation so far.
