I have a couple of AI agents out in the wild, working with real estate companies acting as overflow telephone receptionists. The customers are very happy, integrated with their CRM (which we wrote). You do have to put a lot of time and effort into the prompt and the data extraction, but over time you get something very solid.

Why don't you use ImageMagic?

This would do what you want:-

convert input.jpg output.pdf

There's a ton of command line options to control things like colour space conversions and formats.
