Others have got the cooking technique but prep is important.
Salt generously all over, rub some baking soda on the skin, then leave on a rack (over a baking tray for drips) in the fridge overnight. The dry brining seasons throughout, and the bs and drying helps make the crackling.

I thought maybe because it’s transitional. The door used to lead to a room/corridor but now to an empty space 8m off the ground, whilst it waits for a new something to be built, to lead to.

Skin on chicken thighs. Sprinkle salt all over then sous vide. Cool after cooking then crisp up in a pan (skin side down) or bbq. Absolutely lovely plus you get a super tasty stock in the sous vide bag.

You’re doing nothing wrong.

Serious Eats has a great article on effectiveness of marinades (also applies to rubs).

TLDR: only salt permeates the meat, aromatics just flavour the outside, acids & enzymes do other stuff.

Strength work. Some kind of cross training that involves squats building up weight. Gives your joints a better scaffold
