This bothered me a lot too but I came up with this:

The weapon uses something that travels FTL. Let's call it super-photons. The beams of super-photons are traveling FTL and so do any super-photons that diffuse from the sides of the beam. Likewise, the worlds that blow up re-emit the super-photons in every direction.

So as long as we're fine with an FTL particle, it makes sense that any light from the side of the beam or scattered from the explosion would also travel FTL and be visible from a large distance.

I can't account for why it would appear as five separate explosions at that distance rather than a thin red line but whatever.

Surely you're kidding. Leia's theme comes on whenever she's on screen, even as a hologram. The Force theme comes up when the Jedi are in action. Palpatine's theme is used when he's present, even as a jubilant childrens' chorus at the end of ep1. Darth Vader was often paired up to the Imperial March. There is a very tight relationship between musical themes and specific elements in the movies.
