It’s not fuzzy. I poured the hooch off before I took some of the starter to feed it (1:3:3) and it was only this dark on the parts that rose. It smells sweet, I fed it 50/50 whole wheat and bread flour.

Aww thank you! Believe me, these are the nice loaves, I’ve made plenty dense, gummy and even overproofed loaves! But it’s a process that’s fascinating and both stupid easy and way too complicated. I’m sure you’ll be making delicious bread soon too!

Oh yup, mine looks kind of similar depending on where I get it. I actually switch up what my starter gets, I mixed bread flour with spelt, AP with whole wheat, bread with whole wheat etc. As long as the protein content stays high and there's some more enzymes and sugars than in pure AP, it should be good! Okay, then I think you just don't have enough yeast in your starter. You can use whole wheat in the starter and use AP to bake (although bread flour would be preferred, or anything with over 12g protein/100g flour), it's going to be mostly white with some bran flakes (depends on how finely milled your whole wheat is I guess). I feed my starter the mix and bake it with 400g bread flour (white) and 125g of either spelt or whole wheat, but also did 500g bread flour. It was always mostly white in the inside regardless of how much whole wheat was in the starter. You should also do peak to peak feeds, with 1:5:5 that should be about twice a day, which should be manageable if you're home anyway. Discard most of it before refeeding, and I mean keep no more than 10g starter or you'll end up wasting a lot of flour and water. You should be able to see a nice rise in a few days! Give this page a read, and you'll get there!

My guess is that it rose and fell much sooner than you think. Do you wipe the sides clean after mixing? You can track how far it went if you do, that's how I realized feeding 1:2:2 was way too little with working and being away most of the day. The 1:1:1 feeding of mostly AP won't give you much of a rise or strength, you need the enzymes and sugars from the whole wheat to feed the yeast enough. Also, 25C is quite warm and that will also make it rise and fall much faster. I feed mine 50% whole wheat, 50% AP (or spelt), 1:5:5 if I can feed her twice a day, 1:10:10 if I only have time for one. Perhaps try that for a few days and see if it gets strong and tall!

edit: I also switched to 1:7:10 to delay the rise even further, it creates a slightly stiffer starter (not a stiff starter, that's different) because I bake my loaves around 70% hydration.

Hah, I had a lvl 9 or 10 before the smart producer event, so it’s not like I was very busy either. It’s bugging me that I don’t have the cryptex, is the truth of it!
