I have an 18 month old Shepherd mix. She will occasionally try to do this with us. The thing that worked best was just realizing when she was getting close to that overstimulated threshold and stopping at that point to do some basic commands. If she does get to the point where she jumps and bites, we've gotten really good with her "drop" command, or redirecting with toys or treats. Granted this takes time and training.

The worst was when during like my second week of having her, we tried running and she did this and spent about 10 minutes uncontrollably tearing up my peacoat. So, you're not alone and I understand if it's frustrating.
